I saw this recipe on Pinterest called Garlic and Brown Sugar Chicken. and sometimes I get pin happy before reading the ingredients. So I repinned it under my Recipe Inspiration page and made quite a few changes to use healthier ingredients that are great for improving your health. The results? Three happy family members plus my sister. I’ll definitely make this again. Crockpot cooking is a favorite of mine!
Honey Garlic Chicken with Sweet Potato Gravy:
2 Chicken Thighs and 2 Chicken Breasts (the thighs were great and next time will go with all thighs)
1/2 cup of local raw honey
1/4 cup of maple sugar
1/2 cup of Bragg’s apple cider vinegar (ACV)
1/3 cup of Lime flavored carbonated water (I bought mine from Trader Joe’s)
3 Tablespoons of Liquid Braggs Amino Acids (fermented soy beans, a healthy alternative to Soy Sauce)
2 Tablespoons of Arrowroot starch (Tapioca Starch will work too as corn starch, but we stay away from corn products)
3 shallots diced up
1 cup of shredded carrots
1 sweet potato puree
Salt, pepper and garlic powder
Place chicken in crock pot and season with Celtic Salt, Pepper and Garlic Powder. I was generous with the garlic powder. Dice up shallots and add shredded carrots on top of chicken. Mix the rest of the ingredients through the arrowroot starch in a separate bowl and pour over chicken and vegetables. Cook on high for 4-6 hours. Meanwhile, boil one sweet potato and mash it up. Add cooked juices to the potato and puree it. Pour over the chicken mixture and mix together when the chicken is cooked. Serve over quinoa and top with green onions.

Thank you all for your kind feedback! The sweet potato puree actually replaces all the sweetness the brown sugar gives in the original recipe and makes the sauce a little more thick. I prefer using quinoa over rice, but brown rice is definitely better than white. The feedback has inspired me to do a post for next week on how to replace the junkie stuff with healthier alternatives.
